Gomiztegi is a basque farmhouse wich elaborates artisan exquisite cheese with latxa sheeps' raw milk, the autochthonous sheep of the Basque Country, according to the specifications of Designation of Origin Idiazabal.

Idiazabal Cheese of the highest category, put through a rigorous tasting session by the Committee of Experts from the Designation of Origen Idiazabal, Artzai Gazta and Zumitz, demands marks which are much higher than the mean obtained within the rest of the production.
Firm aspect, homogeneous, creamy color, hard rind and clean, penetrate smell, intense, balanced flavor-neither too sweet nor too acidic, with a hint of natural rennet, a pronounced and lasting aftertaste.
Because of the cheese's superior quality we recommended trying it simply itself, cut in triangles, accompanied by wines (red, white or txakoli) which are or equally fitting category Declared Gastronomic European Heritage.
Whole cheeses weighting approximate 1 kg, prepared as gifts in an elegant black box, with an elaboration certificate, tasting session number and identity stamp.
